The decision to switch to a vegan diet can be overwhelming. Many people that are contemplating this change worry about the limits of their food choices. The fact of the matter is there are plenty of great vegan recipe ideas that will make your taste buds come alive.

What People Get Wrong About a Vegan Diet

One stumbling block for those wanting to start a vegan diet is how hard it will be. People usually find certain foods such as steaks or cheese that they think they cannot live without for an extended time.

Once you begin to cut these items out of your diet, you will soon see you do not miss them. Take a look at these two exciting vegan recipes. These recipes should make it crystal clear that plenty of foods can keep you excited on a vegan diet.

Lentil Bolognese

One of the best parts of this recipe is all of the robust flavors it offers. This recipe truly does create the feel and texture of meat in a meatless recipe.

The process for making this meal is relatively simple. You start by sautéing onions in olive oil until they are fragrant. You then add celery, garlic, carrots, and any herbs and seasonings you may like. Let this all simmer for about five minutes.

You then add tomato paste and let it all brown a little bit. From there, you want to deglaze the mixture by pouring in a generous amount of red wine and then letting it cook off.

Finally, you want to add a plentiful portion of lentils. Remember that the smaller the lentils are, the faster they will cook. Bring the entire thing to a boil and then cover it and simmer for 20 to 30 minutes.

As a final step, you will want to remove the lid and let some of the liquid cook off. Give it an absolute blast of flavor by stirring in some balsamic vinegar. Then pour this all over your favorite pasta and dig in. This Lentil Bolognese may be one of the tastiest vegan recipes you will ever try.

Whole Roasted Cauliflower

Start this recipe by removing the cauliflower leaves leaving the stem. You then want to trim off the stem to keep it level so it stays upright during roasting.

Place the cauliflower in a pan and then drizzle it with olive oil and season it with salt, pepper, and zaatar. Add a cup of water to the pan, cover it with aluminum foil, and then bake it in a 425° oven for 45 minutes to one hour.

Take the cauliflower out of the oven, remove the foil, and bake it for another 30 minutes. When done, you will end up with a crispy and golden cauliflower. Add some creamy tahini sauce to the top, and you are ready to go.

Whether you are switching to a vegan diet, trying to incorporate vegan recipes into your diet occasionally, or are a seasoned vegan pro, these are two great recipes to add to your life. Once you try them, you will want to make them time and time again.
